After our week at Vacation Bible School, I thought it would be fitting to continue on with the Old Testament. Noah's ark is such a great bible story for kids! We had so much fun with these Sacred and Immaculate Heart play doh cookies that I thought we'd make some rainbows.
Ingredients:
1 1/2 cups butter, softened
6 ounces cream cheese, softened
2 cups white sugar
2 eggs
2 teaspoons almond extract
5 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
For Decorating:
gel food coloring
white sugar
Start by creaming the butter, sugar, and cream cheese. Then add the eggs and almond extract. Stir until smooth. In a separate bowl mix dry ingredients, and add to the butter mixture. Split into 3 parts and color them red, yellow, and blue. Then roll into 2 inch balls. Cover and refrigerate for 2+ hours. When firm, roll dough into coils (aka 'snakes'), stack 3 colors together, and shape into rainbows, trimming with a butter knife where necessary. Preheat oven to 350. Sprinkle the top of each cookie with white sugar, and cook for 12-15 minutes or until cookies begin to brown on edges.
These were super easy to make. Lydia (age 5) shaped the rainbow cookies completely unassisted and they were adorable! :-)

I love the shape because they can sit right on the edge of your glass of milk! I will admit that play doh cookies aren't my favorite to eat, but they're a hoot to make! (And they're not awful to eat- just a little tough.)
